Ingredients


  • To sauté and grind :
  • Oil – ½ tsp
  • Jeera (cumin seeds ) – 2 tsp
  • Pepper – 1 tsp
  • Coriander seeds – 2 tbsp
  • Red chilly – 4 to 5
  • Fennel – 1 tbsp
  • Cinnamon stick – ½ inch
  • Curry elaves – few
  • Garlic – 4 pods
  • Ginger – 2 tbsp (shredded)
  • Red chilly powder – 1 tsp
  • Garam masala powder – 1 tsp
  • Shredded coconut – ¼ cup
  • To boil and peel
  • Baby potato – ½ kg
  • Turmeric – pinch
  • Salt – as reqired
  • To make the curry
  • Oil – 2 tbsp (coconut oil)
  • Mustard seeds – 1 tsp
  • Green chilly – 2 nos
  • Onion – 2 nos finely chopped
  • Tomato – 2 nos finely chopped
  • Coriander leaves – to temper

Instructions


  1. Heat the kadai and add the tsp of oil once hot add the spices cumin, coriander seeds, curry leaves, red chilly , pepper corns, fennel seeds, along with cinnamon stick. Sauté till its get roasted. Then allow it to cool down completely. Then add it to the jar, along with ginger garlic, red chilly powder, garam masala powder, coconut. Grind in to smooth paste.
  1. Mean while wash the baby potato twice. And boil it by leaving 3 whistles. Once cool down. Peel the skin of potatoes. Chop the onion green chilly.
  1. Heat the kadai add the 2 tbsp of oil , once hot , add the mustard seeds once cracked. Add the onion green chilly sauté till it becomes transulent, then add the tomato , sauté till it becomes mushy.
  1. Then add the ground paste to the kadai and sauté well. Till the raw smell goes, Then add the boiled potato and mix well . Make sure the paste coat well . If needed you can add the tbsp of oil.
  1. Sauté till the potato gets roast. Temper it with coriander leaves. Serve it with variety rice, I served it for Tomato briyani ! along with Raitha.

Notes

I do not have coconut when I was making this roast, Even though it tasted too good. If you want to avoid coconut you can very well try. Adjust the spiciness as per family need. Sauté the mixture till raw smell goes, then add the potato , otherwise it wont get proper roasting. Suggestion If you do not have baby potato you can also try with ordinary potato. Cut in to small cubes, and boil it. I never suggest this recipe for busy week days. If you are using baby potatoes it is time consuming. You can also try with gingelly oil, it definitely brings out lot of flavors, taste change too.
